Some kind of a red fish
If you've got more than a few days in Sydney, Australia, check out the Sydney Fish Market in the Pyrmont area. It's the third largest fish market in the world, and they've got some cool fish on display. Pretty sure they do guided tours, but we went on our own and just walked around for free. To get on the floor you'll need a bright colored vest, long pants and shoes, but you can walk around the top floor and look down on the action without proper attire.

A huge snapper caught with the head of a skipjack tuna in Tamarindo, Costa Rica
Tamarindo, located in the Guanacaste Province of Costa Rica, along with being a great surf and resort spot, is a really fun place to fish. I was there in December, which is supposed to be a good time to catch marlin and sailfish although we didn’t, but I had just as much fun reeling in the hard fighting skipjack and yellowfin tunas that bit almost every time we threw out a line. We were even lucky enough to catch a snapper.
